Greek Power Salad





½ head of Iceberg Lettuce
½ head of Romaine Lettuce
Any other lettuces you like
1 lg ripe tomato cut into thin wedges
1 cucumber, peeled, cut lengthwise, then into ¼” half moons
½ green or red bell pepper, sliced into thin strips
½ thinly sliced sweet Vidalia Onion (optional, but must be sweet not strong)
Marinated mushrooms if desired
½ tsp salt, ½ tsp ground black pepper
1 Tbs dried oregano
1/2 cup crumbled Feta cheese
¼ cup Extra Virgin Olive Oil
1 Tbs Red Wine Vinegar
2 Tbs Fresh Lemon Juice (never bottled)
Several pitted Calamata Olives

Tear lettuces by hand into bite sized pieces
Mix lettuces and raw vegetables together in a large bowl. Drizzle Olive Oil, vinegar and lemon juice evenly. Sprinkle on salt, pepper and oregano. Add Feta Cheese and olives. Toss very well until lettuce is coated lightly with the oil. Adjust oil and vinegar/lemon juice to your taste.

Heat some pita bread, spoon some hummus on a plate and lightly sprinkle with olive oil. Enjoy with the salad.

Let's go to the DMV!

The Department of Motor Vehicles.  Just the name alone brings joyful memories to my mind.  Whichever one you choose in New York State...you know you're in for a fabulous time.  

Usually when you arrive, The greeters have hot cider and fresh coffee.  And who can forget those free scrumptious pieces of Crumb cake.  There are many open, comfortable seats, some even with massage action.  All around are smiling faces and good vibrations.

That is what the DMV would be like...in heaven.  Now let's talk about the real dmv.  You arrive to a mob of people, most of them yelling, and all of them angry.  Red numbers and letters flashovers bullet proof glass panes filled with sad faces.  After grabbing your ticket with it's meaningless, confusing numbers, you turn and see there is no where to sit.  So you lean on the grimy, dusty wall.

Why this angry rant?  Well today the DMV sunk to a new low in my mind.  I called the dmv offices in the bronx, white plains, yonkers, utica, and even Peekskill only to get the same message.

"We are sorry, but due to a high call volume, all of our agents are currently busy at this time.  We invite you to visit our website at...."

Are you F-ING kidding me?  and I got this message at every single office, for many hours.  They are so lazy that they won't even let you weight to talk to them!

My days of dealing with the DMV are now over.  I am going to stick with passports and passport cards.  Most of that you can do through the mail anyway.  Although I envy most people's ability to drive, I pity you on your next trip to the DEPARTMENT OF MONSTROUS VILLAINS.

Information Super Light Beams

I still remember dial-up internet in the mid 1990's.  Trying to download a 30 second porn clip was enough to drive me nuts!  

Boy have we come a long way.  This article talks about a technology called 'Twisted Light,' which can send data at a staggering 2.56 Terrabytes per second.

This may not mean much to some people so I will try to put it in terms of MP3s.  Lets say that an average MP3 on Itunes is 5 Megabytes.  That would mean about 200 songs to every Gigabyte.  And since there are 1000 Gigabyte per terrabyte...that means a TB could hold approximately 200,000 songs\!

Now imagine you could download 2.56 times that every second.  We are talking about 1,000,000 songs in only seconds.  Read the article if you're still interested.

Grilled Chicken wrap or Salad


Here is a very simple recipe for a delicious grilled chicken wrap or salad.  It is easy, delicious, and nutritious.

about 3/4 lb grilled chicken breast
baby spinach
honey mustard
1 onion, red
Cheese, either brie or cheddar
Walnuts or pecans {optional}
1 Wrap if making wrap and not salad


This recipe is simple and quick.  you can make as much or as little as you like but i will explain the way i like it.  Start out with a wrap, I prefer whole wheat or spinach.  spread the honey mustard over the inside of the wrap.  Next add the grilled chicken, after thinly slicing it.  On top of the chicken, I add a layer of brie cheese, but any cheese will do if you don't have brie in the house.  Chop up the onion and baby spinach and add on top of cheese.  Next it is time to "wrap it up!".  The number one rule for this is DO NOT OVERSTUFF THE WRAP.  You are better off making a second wrap than trying to fit double the ingredients in one.  Bite into this healthy and delicious and enjoy!

Salad Variation:

The only difference for this is lose the wrap, and add some nuts such as pecans.  Also, if additional greens are desired, I recommend the Mesclin Mix.

Yoga for Everyone!

Yoga has grown exponentially in popularity over the past few years.  I started doing it on the Wii Fit a few years ago, and now take lessons from my friend Justin.  It has helped me with strength training, balance, focus, and flexibility,  These days, yoga is becoming more and more accessible.  I read the following article about new software for various devices, both mobile and in home.  They range greatly in price, from free applications to hundreds of dollars if you are buying the Wii system and necessary peripherals.

Concept Navigation Glasses For The Blind Provides Many Encouraging Advances In Technology

These glasses are just incredible and I hope they become available as soon as possible.  Equipped with built in sensors to give a 360 degree idea of what surrounds a wearer. The glasses come with a microphone where a user could in theory ask the "glasses" questions to get around and the "glasses" would answer said questions.  Since these are just concept glasses I again hope that when they finally hit the market they could even be improved.

David Stern Asks Jim Rome If He Is Still Beating His Wife

The NBA commissioner David Stern was being interviewed by controversial sports show host Jim Rome on his Nationally syndicated radio show.  He asked him if there was any truth to the widely believed theory that the NBA lottery draft for the number one pick was fixed. His response was one that nobody could see coming.  The NBA has owned the New Orleans Hornets since 2010 and only recently sold it to Billionaire and current owner of The New Orleans Saints Tom Benson.  Many have speculated that the draft was fixed as a reward for purchasing the struggling New Orleans Hornets with the first pick in this years draft which will take place on June 28th.

Pretty Ironic

A 39 year old male from West Virginia decided to hitch hike across America and chronicle his experiences to later be translated into a book he planned on calling "Kindness In America". No word on what if any title change is in the works.  I couldn't stop laughing when I read this for a good 30 minutes.  There is a happy ending so I hope you can feel free to laugh as well.

Weigh In 3

So my weight this morning was 248 lbs.  So I lost another 2.5 lbs in the last 5 days.

It has only been ten days and I am already feeling much better.  More energy, longer sleep, improved balance.  I wil report back in five days on the 16th.

The Goal

So I have been pretty fat for a while at this point.  Going blind combined with getting 500 mg's a day of powerful steroids leads to some serious weight gain.  But last week I bought a nice stationary bike so I can lose some serous fat.

My goal is to lose 50 pounds by the end of the year.  Starting today, I will try to bike almost every day.  Or at least 6 of every 7 for the next month.  I weighed myself after having lunch today and I was 257 lbs. I will post my weight every 5 days so we can see how much the bike `helps.
