Greek Power Salad





½ head of Iceberg Lettuce
½ head of Romaine Lettuce
Any other lettuces you like
1 lg ripe tomato cut into thin wedges
1 cucumber, peeled, cut lengthwise, then into ¼” half moons
½ green or red bell pepper, sliced into thin strips
½ thinly sliced sweet Vidalia Onion (optional, but must be sweet not strong)
Marinated mushrooms if desired
½ tsp salt, ½ tsp ground black pepper
1 Tbs dried oregano
1/2 cup crumbled Feta cheese
¼ cup Extra Virgin Olive Oil
1 Tbs Red Wine Vinegar
2 Tbs Fresh Lemon Juice (never bottled)
Several pitted Calamata Olives

Tear lettuces by hand into bite sized pieces
Mix lettuces and raw vegetables together in a large bowl. Drizzle Olive Oil, vinegar and lemon juice evenly. Sprinkle on salt, pepper and oregano. Add Feta Cheese and olives. Toss very well until lettuce is coated lightly with the oil. Adjust oil and vinegar/lemon juice to your taste.

Heat some pita bread, spoon some hummus on a plate and lightly sprinkle with olive oil. Enjoy with the salad.
